Bob Smith, Chef
Bob brings over 20 years of experience
in all facets of the food & beverage industry to our
team, having worked as a chef, waiter, bartender,
manager and sommelier. Bob is the the chief architect of
our new menu, with its emphasis on simple grilled meats
and seafood, and fresh, regional dishes.
Prior to coming to the Port Tavern in
2001, Bob worked at Jonathan's Restaurant in Ogunquit,
ME, and The Rochester Plaza Hotel in Rochester, NY.
He was also the chef/owner of Gabby's, a
restaurant specializing in regional American cuisine in
Greene, New York.
A graduate of the University of
Rochester with degrees in Psychology and French, Bob's
interests include locally grown produce, sustainable
farming, culinary history and wine/food pairings. |
John Shaw, Chef
John Shaw is a seasoned member of the
team with a tremendous amount of experience in the fine
dining.
A graduate of the New England Culinary
Institute, John began his career at the Kennebunkport
Inn as an intern, rotating through a variety of
positions before assuming the Sous Chef position here.
John’s flexibility and skills in dessert production ,
baking and food preparation are terrific assets in the
kitchen.
John has worked at some of the region’s
renowned establishments; Windows on the Water in
Kennebunkport and Old England Inn in Stowe.
He brings
that experience and creative talent to the culinary team
here at the inn. A Kennebunk Native, John enjoys skiing
and winter sports. His dedication and talents make him a
great asset to the Port Tavern & Grille.
